During this class we will make a staple of French cake that you can find in every French pastry shop during summer: Fraisier! But this time without gluten!
It is made of fresh strawberries, super moist sponge and a decadent vanilla cream. This is an intermediate class but beginners are also welcome to join.
During this class of approximately 3 hours, you will learn how to make:
- A super moist sponge
- A diplomat cream
- A strawberry confit
I will make sure to give as many details as possible for each step to make sure everyone can follow. The class will be held online via Zoom with a limited group of students to make sure I can efficiently guide you through all the steps of the pastry. You can ask questions during the class. Prior to the course, you will receive the full recipe of this cake along with a list of ingredients and tools required. The class will be recorded, and a recording of the Zoom session will be available if you want to watch it again or in case you missed the class for some reason.
